A Medley of Green and Orange

We received our farm box today. Everything was so gorgeous that I had to take a few pictures. This is what inspires me to cook. Maybe it will inspire you too.

February Focus on Citrus, Salads & Soufflés

Yesterday, I had the most delicious Tangelo and it inspired the theme for the next meeting - citrus! We will also be learning how to do a savory cheese soufflé. Here's the menu:
  • Orange, Fennel, and Butter Lettuce Salad
  • Orange Vinaigrette
  • Gruyère Soufflé
  • Poached Kumquats
The poached kumquats are sort of an extra. I tried kumquats for the first time about a month ago and I keep craving them! Hopefully I will be able to find some for us to poach.

It might sound like a lot, but most of it is relatively simple. I'm off to the farmer's market this afternoon, we will see what types of oranges (I'm hoping for blood oranges) and lettuce (might not be butter) I come across. The recipes are from Deborah Madison's, "Vegetarian Cooking for Everyone" and Alice Waters, "The Art of Simple Food".

At the beginning of the meeting we will also learn a little about what sustainable agriculture is and why it's important. Here's a link that gives a good description:
